Today’s backcountry recipe comes courtesy of Grace Lasota of the Maine Conservation Corps.¬†Hearty and easy to prep, cheesy burritos can be extremely satisfying after a full day of hard work. Feel free to spice up the recipe with veggies, or extra seasonings, and don’t forget a dash of hot sauce!

 

Ingredient Portion per Person
Flour Tortillas 2 Tortillas
Corn Chips 1/4 Bag
Salsa 2 – 4 oz.
Refried Beans 1/4 of a normal can (~4 – 5 oz)
Rice 4 – 6 oz.
Shredded Mexican Cheese Blend 5 – 6 oz.
Seasonings (salt, pepper, chile powder, cumin, garlic salt, cilantro) Optional, to taste

 

Instructions:

  1. Cook the rice, using a 2-to-1 water to rice ratio, and following package directions. Add optional seasonings if desired
  2. Once rice is tender, stir in salsa, refried beans, and cheese
  3. Stir until mixed thoroughly and cheese is melted
  4. Serve wrapped in a tortilla, or as a rice bowl with crushed tortilla chips sprinkled over. Sear the tortilla in a frying pan for a little extra crunch
