Today’s backcountry recipe comes courtesy of Grace Lasota of the Maine Conservation Corps. Hearty and easy to prep, cheesy burritos can be extremely satisfying after a full day of hard work. Feel free to spice up the recipe with veggies, or extra seasonings, and don’t forget a dash of hot sauce!
|Ingredient||Portion per Person|
|Flour Tortillas||2 Tortillas|
|Corn Chips||1/4 Bag|
|Salsa||2 – 4 oz.|
|Refried Beans||1/4 of a normal can (~4 – 5 oz)|
|Rice||4 – 6 oz.|
|Shredded Mexican Cheese Blend||5 – 6 oz.|
|Seasonings (salt, pepper, chile powder, cumin, garlic salt, cilantro)||Optional, to taste|
- Cook the rice, using a 2-to-1 water to rice ratio, and following package directions. Add optional seasonings if desired
- Once rice is tender, stir in salsa, refried beans, and cheese
- Stir until mixed thoroughly and cheese is melted
- Serve wrapped in a tortilla, or as a rice bowl with crushed tortilla chips sprinkled over. Sear the tortilla in a frying pan for a little extra crunch
